Holmes-made Famous Chocolate Sticky Cake

I have been baking this since a child and remember aged 12 giving it to my headmaster at The Avenues. This is a fridge cake

Ingredients

  • 8 oz Rich Tea biscuits crushed
  • 6 oz Margarine or butter
  • 6 oz sugar
  • 2 tablespoons Cocoa powder
  • 1 egg beaten
  • chocolate to coat
  • optional dates, nuts or cherries

Method

  • Melt the margarine, sugar and cocoa in a pan
  • take off heat and slowly stir in the beaten egg
  • Add the rich tea biscuits and stir well
  • Stir in optional items
  • Place in shallow 7 inch tin, press down, and allow to cool
  • Melt chocolate and pour on top
  • refrigerate to set and cut into squares
