Holmes-made Coconut Ice

A sweet treat loved by those at the seaside

Ingredients

  • 400g Granulated Sugar
  • 200g desiccated coconut
  • 125 ml milk
  • pink food colouring

Method

  • Butter and line a baking tin with greaseproof paper
  • Put sugar and milk in saucepan and boil for 3 mins.
  • Remove from heat and add coconut and stir
  • (*optional) separate mixture in half and put half into bottom of tin for white and pink
  • Add food colouring till pink and stir well and place mixture into tin and press down
  • When cool cut into bars and store in an airtight container
