Aunty Hilda’s Ginger Shortbread

Aunty Hilda was my Grandma’s sister – so technically a great aunt. This ginger shortbread was in our family before “Millionaire’s Shortbread” became a thing.

Ingredients for Base

  • 6 oz self raising flour
  • 4 oz butter
  • 2 oz sugar
  • 2-3 teaspoons ginger powder

Ingredients for topping

  • 4 tablespoons icing sugar
  • 2 oz butter
  • 3 teaspoons golden syrup / treacle
  • 2-3 teaspoons ginger powder

Method

  • BASE – rub base ingredients together and press into a 7 inch sandwich tin
  • bake at 190C (Gas 5/170C fan) for 15 mins. Allow to cool
  • TOPPING melt all topping ingredients in a pan and pour over base
  • allow to cool and cut into squares
