Aunty Hilda was my Grandma’s sister – so technically a great aunt. This ginger shortbread was in our family before “Millionaire’s Shortbread” became a thing.

Ingredients for Base
- 6 oz self raising flour
- 4 oz butter
- 2 oz sugar
- 2-3 teaspoons ginger powder
Ingredients for topping
- 4 tablespoons icing sugar
- 2 oz butter
- 3 teaspoons golden syrup / treacle
- 2-3 teaspoons ginger powder
Method
- BASE – rub base ingredients together and press into a 7 inch sandwich tin
- bake at 190C (Gas 5/170C fan) for 15 mins. Allow to cool
- TOPPING melt all topping ingredients in a pan and pour over base
- allow to cool and cut into squares
